Ingredients:
Raw Banana Stick - 1No
Drum Stick - 1 No
Ash Gourd Stick - 150gm
Yam Stick - 150gm
Red Pumpkin Stick - 150gm
Onion Shallot - 5Nos
Green Beans Stick - 4 Nos
Carrot Stick - 1 Nos
Louki Stick - 150gm
Snake gourd Stick - 100gm
Coconut Grated - 1 Cup
Green Chillies - 4 Nos
Curry Leaves - 2 Springs
Yogurt - 500gm
Turmeric Powder - 1 pinch
Cumin Seeds - ½ Tea Spoon
Coconut Oil - 1 ½ Table Spoon
Water - 1 ½ Cup
Salt - To Taste

Wash the vegetables very well. Peel and cut it into 2 inches (Lengthwise) pieces.
Slice green chillies (Lengthwise)
Cook the vegetables in a covered vessel by adding chillies, water, salt and turmeric powder on a low flame till it tender and dry (be careful not to overcook it and also take care to prevent it from burning)
Crush the shallots and mix of with coconut oil
Grind grated coconut and cumin seeds by adding little water into coarsen paste
Add the ground paste into the cooked vegetables along with curry leaves and combine it well. Heat it in a low flame for 3 mins
Pour lightly beaten curd into this and mix it. Remove from the fire, add coconut oil-shallots mix and combine it
Serve Avial as an accompaniment for rice
